Portillo's Italian Beef Sandwiches

- 1 large chuck roast
- 1 pkg Good Seasons Italian dressing mix
- 1 pkg onion soup mix
- 1 tablespoon all purpose seasoning (I like Lawry's)
- 1 stick butter, salted
- ½ cup beef broth
- ½ cup banana pepper juice
- ½ cup sliced banana peppers
- ½ cup Marconi hot giardiniera
- 1 green bell pepper, sliced
- 6 hoagie rolls, toasted
- 1 lb sliced provolone cheese
Place chuck roast in crockpot. Sprinkle with Italian dressing, onion soup mix, and all purpose seasoning.
Add butter, beef broth, banana pepper juice, sliced banana peppers, and giardiniera.
Cook on low 6-8 hours or high 4-5 hours, until beef is fork-tender. Shred.
Toss in sliced green bell pepper for the last hour.
Load into hoagie rolls when you're ready to serve, pile on the provolone cheese, and broil until bubbly + golden.
Add at least two layers of provolone cheese for that extra melty cheese bite.
