
Cherry Pistachio Boursin Dip
This is the kind of snack you’ll want to linger over, maybe with a glass of chilled Sauvignon blanc and a friend who appreciates the good stuff.
Ingredients
- 2 packages garlic & herb Boursin cheese
- 2 ounces peach preserves
- 5 fresh cherries, pitted
- ¼ cup chopped pistachios
- 1 drizzle hot honey
Instructions
- Smoosh (official term) the Boursin into your serving dish with the back of a spoon. I love to use a pie pan or a large round shallow dish.
- Heat the peach preserves in the microwave for about 20 seconds to soften.
- Spread peach preserves on top of the Boursin cheese.
- Chop your cherries and top the peach preserves.
- Do the same with the pistachios and add them to the top of the dip.
- Drizzle over a bit of hot honey to serve.

Notes
- This is one of those low-effort, high-impact appetizers. It comes together in minutes but feels like something you planned ahead.
- Let the Boursin sit at room temperature for 10 to 15 minutes before mixing. It spreads and blends much easier.
- Chop the pistachios and cherries fairly small so you get a little bit of everything in each bite.
- The balance matters here. The creamy cheese, sweet cherries, and salty crunch from the pistachios all play off each other.
- If your cherries are extra sweet, add a light pinch of salt to keep things from tipping too far.
- This dip holds up well in the fridge. Make it a few hours ahead to let the flavors come together.
- Serve with crackers, toasted baguette slices, or even apple slices for a fresh option.
- If you are setting this out for a gathering, double it. It goes fast.
