A Southern classic, the tomato sandwich

Ol' Fashioned Southern Tomato Sandwich

This Southern tomato sandwich is as simple as it gets, and that is exactly why it works. Thick slices of ripe tomato, a generous layer of mayo, a sprinkle of salt and pepper, all tucked between slices of soft sourdough. That is it.

Ingredients
  

  • 1 large slicing tomato (best from the farmers market or homegrown)
  • 1 tablespoon Duke's mayo
  • 2 slices sourdough bread
  • salt and pepper to taste

Instructions
 

  • Slice up your tomato, and immediately add salt and pepper to your tomato to taste.
  • Very lightly toast your sourdough bread.
  • Add mayo to bread. Add salt and pepper lightly on the mayo, as well.
  • Add your tomato, make the sandwich and enjoy the best sandwich you've ever had!
  • If you want to jazz it up, add some red onion or bacon slices.

Notes

It is the kind of sandwich that depends on good ingredients, especially the tomatoes. When they are in season, juicy and full of flavor, you do not need anything else. The mayo adds richness, the salt pulls everything together, and the bread soaks up just enough without falling apart. 
It is quick, classic, and one of those things you will come back to all summer long.
